Our family has a Friday night tradition: pizza.
Along with our pizza we usually enjoy a big green salad with lots of great veggies and my favorite homemade dressing. Once you experience homemade dressing going back to the store-bought bottle of “salad dressing” is not an option.
On this relaxing, celebratory Friday night of cheese pizza and a big salad, let’s make a jar of homemade dressing. This dressing can be stored in the fridge lasting at least a month.
Homemade Vinaigrette
Ingredients
- 1 small garlic clove minced
- 2 tsp shallot finely minced
- 1 tsp oregano
- 1/2 tsp dried thyme
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup red wine vinegar or white wine vinegar
- 2/3 cup extra virgin olive oil
Instructions
- Place all ingredients in a jar with a tight-fitting top. Shake the jar to mix ingredients. Store the dressing in the refrigerator for up to a month.

I went to Amazon to order the Eden white vinegar and it’s not listed. They are out of the Eden red vinegar and don’t know when or if they will carry it again. Any other options?
Hey Barbara Ann, If you have a local natural food store, they will carry Eden brand. Another option is to pick up any bottle of red vinegar. Just read ingredients. As long as the ingredients are real (vinegar ;)), then it will work!
How do you stop the olive oil from solidifying when it is refrigerated?
Hey Candee, Unfortunately there isn’t a way to keep it from solidifying in the fridge. The good news is one characteristic of true olive oil is it will solidify when cold, the bad news is you need to run the jar under warm water each time you use the dressing and shake it once it’s a liquid.

Hey Trey, Thanks for the recommendation. I believe Cisco is made from vegetable oil, which I wouldn’t recommend if you’re making a real food dressing. Avocado oil may be a real food alternative.
